Ingredients required:
- 2 Medium potatoes (peeled and cubed), boiled
- 1 onion, chopped
- 1 Green chilli
- A handful of fresh coriander leaves
- 4 tbsp fresh tamarind chutney
- 2 tbsp hot mint chutney
- 1 Lime
- 1 spring onion
- Chaat masala

Steps for making:
- Deep fry the boiled potatoes until golden and crisp, drain excess oil on absorbent kitchen paper and put them into a bowl.
- Add the chopped onion, green chilli and coriander leaves. Then add the tamarind and mint chutney.

Squeeze in the lime juice, add the chaat masala, and spring onion and season with salt.
- Mix everything together nicely to combine.
- Serve hot or warm in small bowls.
Paneer chaat.

Ingredients Required:
For the chutney -
- 100 gm slit green chillies
- 3 Tbsp roasted ground sesame seeds
- 3 Tbsp grated jaggery

150 ml thick tamarind pulp or tamarind powder
- 1 tsp chilli powder
- 1/4 tsp turmeric powder
- 2 tsp salt
- 5 Tbsp sesame oil
- 1/2 tsp mustard seeds
- 1/2 tsp fenugreek seeds
- For Paneer chaat.
- 400 gm paneer
- 2 Tbsp lemon juice
- 2 tsp dried mint
- 1/4 tsp roasted ground cumin
- Himalayan Pink Salt
- 2 tsp chaat masala
- 2 Tbsp chopped coriander
Steps for making:
Making Chutney -
- Slit the green chillies lengthwise.
- Stir sesame powder and jaggery into tamarind pulp.
- Add chilli and turmeric powder with salt.
- Simmer over moderate flame for 5 minutes.
- Heat 1 Tbsp oil and saute mustard and fenugreek seeds for a few seconds before adding to the tamarind mixture.
- Heat the remaining oil. Fry green chillies until tender.
- Add tamarind mixture to the pan.
- Stir to combine. Cool.
Making Paneer chaat -
- Cube paneer.
- Combine the remaining ingredients.
- Season and pour over paneer.
- Chill before serving with the chutney.
Papdi Chaat Recipe:

For Khatti Chutney -
- 1 cup coriander leaves
- 1/4 cup pudina leaves
- 1 green chilli
- Ginger powder
- 1/2 tsp Himalayan pink salt for taste
- 1/2 tsp garam masala
- 1 lemon (juiced)
For Meethi Chutney -
- Tamarind powder or 200-gram tamarind pulp (soaked in 1 1/2 cup water)
- 800-gram sugar
- 3 tsp kachri powder
- 1/2 tsp saunth powder
- 1 tsp degi mirch
- 1/2 tsp Himalayan Pink salt
- 1/2 tsp garam masala (with black cardamom, mace, nutmeg, zeera, laung)
For Dahi(Curd) -
- 2 cups yoghurt
- 2 tbsp powdered sugar
- For garnishing:
- pomegranate seeds
- Sev
Steps for making:
Preparing Meethi chutney.

Soak the tamarind pulp in water for 25-30 minutes. Squeeze it with your hand to extract all the pulp. Strain and throw away the residue in the strainer. Or directly take Tamarind powder for ease and mix in a water
- Add the tamarind water to a saucepan and add sugar. Cook on low heat till the sugar dissolves. Let it cool.
- Once it cools down add kachri powder, saunth powder, degi mirch, salt, black salt and garam masala.
- Your meethi chutney is ready.
Preparing the dahi.
- Whisk yoghurt with some powdered sugar.
- Keep it in the fridge to cool.
Preparing papadi chaat.
- In a plate place papadi. Break them a little from the middle.
- Add sweetened curd, khatti chutney, meethi chutney.
- Garnish with pomegranate and sev.
- Sprinkle some chaat masala.
- Serve.
Ragda Patties Recipe :
Ragda patties, a famous Indian chaat, is a delicious dish made with boiled potatoes and Ragda, a thick gravy made from dried peas. The dish is garnished with onions, tomatoes, cilantro and chaat masala. Ragda patties are very
easy to make at home. Let’s check how it's made.
Ingredients required:
For boiling peas.
- 1 cup soaked white peas
- 2.5 cups water
- Himalayan pink salt
- ½ tsp turmeric powder
For ragda.
- 2 tbsp oil
- 1 tsp cumin seeds
- Pinch of hing
- 1 tsp fennel seeds
- 1 tsp green chilli paste

½ tsp ginger paste
- ¼ tsp turmeric powder
- 1 tsp red chilli powder
- ½ tsp cumin powder
- 1 tsp coriander powder
- Boiled white peas
- 1 tsp chaat masala
- ½ tsp garam masala
- 1 tbsp jaggery
- 1 tbsp tamarind pulp or tamarind powder
- 1.5 cup water or as required
- 1 medium size boiled potatoes
- Himalayan pink salt
- Some coriander leaves
For patties or aloo tikki.
- 4 medium size boiled potatoes
- ¾ cup soaked poha
- 1 tsp green chilli paste
- ½ tsp ginger paste
- ½ tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp coriander powder
- ½ tsp cumin powder

1 tsp chaat masala
- ½ tsp garam masala
- Himalayan pink salt
- Some coriander leaves
For assembling ragda patties.

Tamarind Date chutney
- Green chutney
- Chopped onion
- Chopped tomatoes
- Chaat masala
- Sev
- Coriander leaves
Steps for making:
Pressure cook white peas -
- In a pressure cooker, add soaked white peas, turmeric powder, salt and water. mix well.
- Cover and Pressure cook 5 whistles on medium flame or until peas get cooked completely.
- Mashed boiled peas slightly with a masher. Keep it aside.
Making ragda -
- In a kadai heat 2 tbsp oil, cumin seeds, fennel seeds and hing. Saute for a minute.
- Now add ginger and green chilli paste. Saute it.
- Then lower the flame and add turmeric powder, red chilli powder, coriander powder and cumin powder and some water. Mix well and sauté masala till oil separates from its sides.
- Add the boiled peas mixture and mix well.
- Now add chaat masala, garam masala, jaggery and tamarind pulp. mix well.
- Then add 1.5 cup water and mix well.
- Now add salt and grate 1 medium size boiled potato into the gravy. mix well.
- Cook ragda for 5 minutes on low flame.
- Garnish with some coriander leaves. Ragda is ready.
Making patties -
- In a bowl, mash 4 medium size boiled potatoes.
- Then add green chilli paste, ginger paste, turmeric powder, red chilli powder, coriander powder, cumin powder, chaat masala, garam masala, salt, soaked poha and some coriander leaves.
- Mix well making sure everything is well combined.
- grease hands with oil and prepares small patties.
- shallow fry patties on medium flame.
- fry on both sides until it turns golden and crisp.
- Patties or aloo tikki is ready. keep it aside.
Making ragda patties chaat -
- On a plate, spread some ragda. Then place patties on it.
- Further, pour a ladleful of prepared ragda over it.
- Top with green chutney and tamarind chutney.
- Garnish with chopped onions, tomatoes, chaat masala and sev.
- Enjoy Ragda patties.
